Roasted chicken in black truffle

INGREDIENTS
1, Lung Jiang chicken
2, Black truffles
5ml, Black truffle oil
75g, Black truffle paste

Method

1. Wash chicken. Keep the head and tail. Rub salt onto the chicken thoroughly.

2. Thinly shave the black truffles, add black truffle oil then put between the skin and meat of chicken.

3. Use injector needle to inject 2ml black truffle oil into chicken meat. Cover with cling film and marinate overnight.

4. Pour the black truffle paste inside the chicken. Seal the seam with kitchen strings.

5. Mix the Hua Diao rice wine and dark soy sauce as marinade, brush the marinade onto the chicken evenly. Bake in an oven at 150℃ (top and bottom heating) for 1 hour. Rotate once in between. Until well done.

6. Bake at 250℃ (top and bottom heating) until golden color. Serve.
