Golden Water Chestnut Cake

INGREDIENTS
500 g Water chestnut powder
500 g Fresh water chestnut (flesh only)
680 g Brown slab sugar
2100 ml Water (one portion as 800ml, another portion as 1300ml)

Method

1. Dissolve water chestnut powder with 800 ml of water. Set aside as powder mixture.

2. Crush the water chestnut with a vegetable knife.

3. Melt brown slab sugar in 1300 ml water with gentle heat. When sugar is heated up, pour 1/10 of water chestnut powder mixture into the melted sugar. Stir-cook the mixture until slightly thick. Remove from heat.

4. Cool down the sugar mixture for about 5 – 10 minutes. Pour, while stirring, the sugar mixture into the remaining water chestnut powder mixture.

5. Mix well all crushed water chestnut with powder mixture. Pour into the steam tray in proportions. When the water is boiled, steam with strong heat for 35 minutes. Remove from heat and cool down. Wrap the trays with plastic food wrap and put into refrigerator for storage.

6. Cut water chestnut cake into pieces. Heat the frying pan with oil. Fry the cake pieces with gentle heat until both sides are golden and slightly crispy. Enjoy!
